Ingredients

- 2 boneless, skinless chicken breasts

- 1 tablespoon olive oil

- 2 cloves garlic, minced

- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

- 1 teaspoon fresh ginger, grated

- Juice of 1/2 lemon

- Salt and pepper


- 4 cups Romaine lettuce, chopped

- 1/4 cup grated Parmesan cheese

- 1/2 cup cherry tomatoes, halved

- 1/2 cup red onion, thinly sliced

- Caesar dressing


For the Croutons:

- Small loaf of bread or half a baguette

- 2 tablespoons olive oil

- 1 teaspoon garlic powder

- Salt and pepper, to taste

- 1 teaspoon dried herbs (such as Italian seasoning or dried thyme)

Directions

1. Prepare the Chicken

- In a small bowl, mix together the olive oil, minced garlic, dried thyme, grated ginger, lemon juice, lemon zest, salt, and pepper.

- Rub this mixture all over the chicken breasts, ensuring they are well coated.


2. Air Fry the Chicken

- Preheat your air fryer to 190°C/375°F

- Place the seasoned chicken breasts in the air fryer for about 12-15 minutes, flipping halfway through, until the chicken is cooked through and reaches an internal temperature of 75°C/165°F

- Once cooked, remove the chicken from the air fryer and let it rest for a few minutes before slicing.

3. Make the Croutons

- While the chicken is cooking, cut The loaf of bread into small cubes (15mm cubes)

- In a mixing bowl, combine the cubed bread, olive oil, garlic powder, salt, pepper, and dried herbs. Toss until the bread is evenly coated.

- Spread the croutons in an even layer put in the over on greaseproof or parchment paper and cook at 180°C/370°F until the croutons are golden brown and crispy. Keep an eye on them to prevent burning, this should take under 10 minutes and ready at the same time or before your chicken

4. Prepare the Salad

- In a large bowl, combine the chopped Romaine lettuce, halved cherry tomatoes, sliced red onion, and croutons.

- Drizzle the Caesar dressing of your choice over the salad and toss to combine. Adjust the amount of dressing to your taste.


5. Serve

- Divide the salad between two plates or bowls.

- Top each salad with sliced garlic, thyme, lemon, and ginger chicken.

- Sprinkle additional Parmesan cheese on top and garnish with lemon wedges or fresh thyme.


If you’ve like to enjoy later don’t add the croutons and dressing until you are ready to eat.
