Ingredients:

  • 2 large tomatoes, cut into 1.5cm cubes
  • 1 cucumber, cut into 1.5cm cubes
  • 1 red onion, thinly sliced
  • 1 cup feta cheese, cut into large cubes
  • 1-2 teaspoons dried oregano
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp red wine vinegar (optional)
  • 1 cup Kalamata olives (optional)
  • Salt and black pepper, to taste

How to:

  1. In a large salad bowl, combine the tomatoes, cucumber, red onion,
  2. Add olives and feta:
  3. Sprinkle the dried oregano over the top, followed by a drizzle of extra virgin olive oil. Add salt and pepper to taste. Add a small splash of red wine vinegar.

4. When you are ready to eat mixed everything together. Serve immediately as a side dish with grilled chicken skewers, lamb chops or seafood. You can also include as part of a meal prep. Eat within 3 days. Enjoy!
