Ingredients:
- 2 large tomatoes, cut into 1.5cm cubes
- 1 cucumber, cut into 1.5cm cubes
- 1 red onion, thinly sliced
- 1 cup feta cheese, cut into large cubes
- 1-2 teaspoons dried oregano
- 2 tbsp Extra virgin olive oil
- 1 tbsp red wine vinegar (optional)
- 1 cup Kalamata olives (optional)
- Salt and black pepper, to taste
How to:
- In a large salad bowl, combine the tomatoes, cucumber, red onion,
- Add olives and feta:
- Sprinkle the dried oregano over the top, followed by a drizzle of extra virgin olive oil. Add salt and pepper to taste. Add a small splash of red wine vinegar.
4. When you are ready to eat mixed everything together. Serve immediately as a side dish with grilled chicken skewers, lamb chops or seafood. You can also include as part of a meal prep. Eat within 3 days. Enjoy!
