Homemade Coconut Yogurt (dairy-free)

Ingredients:

Ingredients:

- 2 cans full fat coconut milk

- Probiotics (You can use 1-2 tablespoons of an old coconut yogurt with live cultures or a probiotic powder from capsules or a crushed probiotic pill)

- Squeeze of lemon juice for flavour (optional)


Equipment:

- A clean glass jar or container with a lid

- A paper towel/kitchen towel (optional, for covering)

How to:

1. Mix Coconut milk with probiotics (either an old store-bought yogurt or probiotic powder from a probiotics capsule/crushed pill) and combine. If using store-bought yogurt, make sure it contains live active cultures. 


You can also keep 2 tablespoons of leftovers from this yogurt you are making to use as probiotics for your next batch.


2. Pour the mixture into a clean glass jar or container. Leave some space at the top, so the yogurt expands slightly during fermentation.


3. Cover the jar with a lid, kitchen towel/tissue to keep dust out while allowing air to circulate. Place the jar in a warm area (around 38°C or 100°F) for 24-48 hours. You can leave it on the top or back of the washing machine/dishwasher, the top oven with the light on or any warm part of the kitchen. 

… remember the longer it ferments, the tangier the yogurt will be. You can taste it at a few times until you get your perfect flavor. If you want a similar consistency to Greek yogurt, you can strain it using a cheesecloth or nut milk bag after fermenting.

4. After the fermentation, remove the yogurt from its warm spot and stir it gently. If it's too thick, you can whisk in a little coconut milk to achieve your desired consistency.


5. Taste the yogurt and add lemon juice (optional).


6. Transfer the yogurt to the refrigerator to cool and set for at least a few hours.


7. Add any fruit, cinnamon or toppings you want!
