Ingredients:
- 2 ripe banana (very ripe, with brown spots if possible)
- 2-3 passion fruit pulp
- 2 egg yolks
- ¾ cup heavy cream
- ¼ cup whole milk
- ½ tsp vanilla extract (optional)

How to:
1. In a small saucepan, gently heat the cream and milk together until steaming (not boiling). Slowly pour a little of the hot cream/milk into the yolks while whisking (this gently warms them without scrambling). Pour everything back into the saucepan and cook over low heat, stirring constantly, until slightly thickened (it should coat the back of a spoon). Remove from heat immediately.
2. Stir in the pinch of salt and the vanilla extract if using. Let it cool completely to room temperature. (You can speed this up over an ice bath.)
3. In a blender, add the cooled custard, the 1 ripe banana, and the pulp from the 2-3 passionfruits. Blend until smooth and creamy.
4. Pour the blended mixture into a small freezer-safe container. Freeze for 1 hour, then stir or blend again to break up ice crystals (makes it creamier). Repeat this 1–2 more times if you want extra smoothness. Freeze fully overnight.
5. Take out of the freezer and let it sit at room temperature for about 5 minutes before scooping and enjoying your delicious dessert!
